Cyclodextrin (CD)-metal organic framework (MOF) has been developed as a new type of food-acceptable porous material, showing great potential to control the release of volatile compounds. This study aims to synthesize CD-MOF from potassium nitrate, crystallize it with α-CD, β-CD or γ-CD, and use the menthol encapsulation method to further evaluate its complex capacity. Compared with CD, all CD-MOFs have a highly ordered crystal structure and a more regular shape. β-CD-MOF has better thermal stability, and the initial thermal degradation temperature is 253°C, which is higher than the other two CD-MOFs. CD-MOF was used for menthol encapsulation, and the concentration of menthol in inclusion compounds (ICs) was determined. The concentration of menthol in IC follows the following order: β-CD-MOF>β-CD>γ-CD-MOF>γ-CD>α-CD≥α-CD-MOF. The menthol content and encapsulation efficiency of β-CD-MOF are 21.76% (w/w) and 22.54% (w/w), respectively, which are significantly higher than other reported solid materials such as amylose, CD and V type starch.
